This dish is summer on a plate, and goes really well with devilled chicken for a light summery dinner in the garden!
To serve 4 as a side dish.
The salad ingredients:
Rocket leaves – 1½ bags
Fennel – 1 bulb
Oranges – 2
Black olives – a couple of handfuls
The dressing ingredients:
Garlic – 1 small clove
Balsamic vinegar – 1 tbsp
Extra virgin olive oil – 2 tbsp
Salt and black pepper
- Place the rocket and olives in a bowl.
- Slice the fennel as thinly as possible, and add to the bowl.
- Peel the oranges, discarding as much of the pith as possible, and cut into segments. Add to the bowl.
- Combine all of the dressing ingredients to make the dressing and drizzle over the salad.
