This makes quite a lot, but we were making it for a feast at the time. You can halve the recipe if you’re not feasting though.
These are really lovely, they are picklely but really refreshing, and go with all sorts of things, salmon, burgers, roasted ham sandwiches …
Cucumbers – 2
Cold water – 1.5 cups
Cider vinegar – 1 cup
Sugar – ¼cup
Dill – ½
- Thinly slice the cucumbers.
- Place all ingredients in a large dish/container, cover and leave for a few hours until pickled.
